Several weeks ago, my friend Tim delivered a bundle of home-grown Roma tomatoes. I did make a big batch of relish (recipe next week) and I had some left overs. So, my sister-in-law, Alison suggested the following scrumptious recipe:
Pasta Sauce
- Roma tomatoes
- Basil
- Red onion
- Garlic
- Olive oil
- Salt & pepper
Method
- Pop all the ingredients in a tray and cook in a moderate oven for 30 minutes or so
- Blend together and use as a sauce for any type of pasta.
- Yum!
